This is an adaptation of a recipe for apple streusel muffins. Peach Streusel Kuchen, made with fresh peaches and sour cream is moist, delicious, reliable, quick and adaptable

Ingredients
- 2 cups flour
- 3/4 cup sugar
- 1 Tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup sour cream
- 1/2 teaspoon vanilla
- 1/4 cup butter, melted
- 2-3 cups sliced peaches (about 4 peaches) plus a little extra sugar to sprinkle over
Streusel:

- 3 Tablespoons flour
- 2 Tablespoons cold butter

Step by Step Instructions
Step 1
Preheat oven to 400 °Fahrenheit and prepare 9 inch rectangular pan, either oil the inside of the pan or ideally, use a layer of reusable silicon or pan liner.
Step 2
In a large bowl, sift together all dry ingredients.
In another large bowl add together sour cream, and eggs, and vanilla. beat together, then add the melted butter and stir til combined

Step 3
Add the dry ingredients into the wet. Stir till mixture is just whetted. It will be very thick dough.

Step 4
Wash the peaches, slice the peaches, skin on into a bowl and sprinkle with sugar.
Step 5
Prepare the streusel topping: mix the flour and sugar in a smallish bowl, not too small, you need to work in the butter. Then add the cold butter, breaking it up with your fingers and crumbling it into the flour mix until you have the crumbles. This is a modest amount of streusel. if you like a lot of streusel on your cake you can double this amount.
Step 6
Spread the dough onto the bottom of your pan. put the peaches on top, arrange them carefully or let them fall as they will. It just depends on how tidy you like things to look. then sprinkle the streusel on top.
Bake for 20-30 minutes until lightly brown around the edges and toothpick comes out clean from the dough area.
