About this Recipe

I first had a version of this cake at a neighbours birthday party. It was actually prepared as cupcakes – which works just fine. The mom had already adapted it from Martha Stewart’s One Bowl Chocolate cake. I really haven’t changed it much. It’s just a little less sweet.

Ingredients

  • 3 cups all-purpose flour

  • 1 ½ cups sugar

  • 1 ½ cup cocoa powder

  • 1 1/2 teaspoon baking powder

  • 1 1/2 teaspoons salt
  • 1 Tablespoon baking soda

  • 3 large eggs

  • 1 1/2 cup buttermilk

  • ¾ cup hot tap water

  • 1 1/2 teaspoons vanilla extract

  • 6 tablespoons vegetable oil (or olive oil)

substitutions: (you can use sour cream or full fat yogourt instead of buttermilk or add 1 teaspoon of lemon juice to milk and let it sit a few minutes. 

Step by Step Instructions

Step 1

Preheat oven to 350°F. lightly oil three 8-by-2-inch round cake pans; lay a sheet of wax paper cut to size or a reusable nonstick layer. In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt. Then whisk in eggs, buttermilk, water, vanilla, and oil.

Step 2

Divide batter evenly between prepared pans. Bake until tops spring back when lightly pressed, about 30 minutes. Transfer pans to a wire rack; let cool 15 minutes. Invert cakes onto rack, remove wax paper or non stick lining, then turn top-side up (to prevent sticky tops from sticking to rack); let cool completely.

Step 4

Ice with a buttercream icing, I like to use

1/4 cup butter softened,1/4 cup cream cheese softened, 1 t vanilla, a tablespoon of milk and then gradually sift in icing sugar until it has the right consistency,

this wont make a lot of frosting… if you need to decorate then you’ll need to triple this recipe.

 

tip: to ice the cake without having a crumb problem freeze the cake overnight and ice it while it’s frozen.

Single Layer – One Bowl Chocolate Cake

1/2 cup coco powder

1 cup flour

1/2 cup sugar

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 egg

1/2 cup buttermilk

1/4 cup vegetable or olive oil

1/2 teaspoon vanilla

1/4 cup hot tap water

 

Preheat oven to 350 °F.  oil and line 8 inch round cake pan. In a large bowl sift together dry ingredients. Whisk together. Stir in egg, water buttermilk, oil and vanilla until smooth.

Pour into pan and bake, rotating once for 35 -45 minutes. Let cool on rack –  20 mintues – then invert and cool longer.

1/2 cup buttermilk

1/4 cup vegetable or olive oil

1/2 teaspoon vanilla

1/4 cup hot tap water

 

Preheat oven to 350 °F.  oil and line 8 inch round cake pan. In a large bowl sift together dry ingredients. Whisk together. Stir in egg, water buttermilk, oil and vanilla until smooth.

Pour into pan and bake 35 – 45 minutes, rotating once, mid way.

Let cool on rack –  20 minutes – then invert and cool before icing or serve with whipping cream.
