Ingredients
Dough
- 1 eggs, plus
- 1 egg yolk
- 3/4 cup water
- 3 Tablespoons milk powder
- 1/3 cup cold butter (grated)
- 6 tablespoons sugar
- 1 1/2 teaspoons lemon zest
- 3/4 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 3/4 teaspoon salt
- 3 cups flour
- 1 tablespoon yeast
- 1/2 cup raisins
Glaze
- 1/2 cup icing sugar
- 1 tablespoon milk
- 1/2 teaspoon lemon juice
Step by Step Instructions
Step 1
DOUGH: Put all ingredients except fruit into bread machine. Set for dough. Add fruit at signal. (about 10 minutes in OR wait until the dough cycle is done, place the dough on a lightly oiled surface. flatten out to about an inch thick, sprinkle raisins over top, press a little into dough and roll together and pinch the dangling sides)
Step 2
Prepare one 9 x 13 inch pan or 2 smaller pans. If you’re not using non-stick pans use either a non-stick liner or oil lightly.
Step 3
When dough is ready, remove and cut into 14 – 18 pieces. Shape into balls.
Place balls 1/2″ apart on pan.
Step 4
GLAZE: In a small bowl add sugar, lemon and then milk. don’t make ahead of time, it thickens quickly.
Cover and rise in warm place until doubled (about 1 hour).
Cut cross into top with sharp knife or razor blade. nice and deep or the marks will disappear.
Bake 12-15 minutes at 375 F.
Drizzle the glaze over the buns while they’re still hot.
