About this Recipe

Grace’s Place Carrot Muffins are dense and spicy muffin that can easily become a cake, especially if you add some cream cheese icing.

Ingredients

  • 3/4 cup flour
  • 3/4 cup brown flour
  • 1 tsp each, baking soda & baking powder
  • 1/2 tsp each salt and cinnamon
  • 1/4 tsp nutmeg
  • 1/8 t each ginger & allspice
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 cup buttermilk
  • 1/3 cup oil
  • 1/2 tsp vanilla
  • 1 1/2 cups grated carrot
  • 1/2 cup each raisins and walnuts (or pecans)
     skip the nuts if they’re for school, still taste great

Step by Step Instructions

Step 1

Sift together dry ingredients.

Step 2

Stir together wet ingredients.

Step 3

Fold dry into wet, gently until just blended. DON’T BEAT.

Step 4

Prepare loaf pan with a light coating of oil. Pour in batter.

Step 5

Place in preheated oven. Test with a toothpick to check if it’s done.
