About this Recipe

 This recipe is a combination of instructions that started with an attempt to recreate my mother’s recipe. It was alright but a little dull. I then tried a version from Mennonite girls can cook. It was nice but too sweet and heavy.  If you want to dress it up add some whipping cream. Use any fruit, my favourite is  Italian plum.

Ingredients

DOUGH

  • 1 cup flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 egg
  • 1 teaspoon vanilla / or lemon extract

    CRUMB TOPPING

    • 1 cup flour
    • 1 cup sugar
    • 1/2 cup butter

    if you’re using apples add a teaspoon of cinnamon or whatever spices you like with your apple, blueberries are good with a little lemon zest grated in

    Step by Step Instructions

    Step 1

    Mix the dry ingredients together.

    Step 2

    Cut in the butter.

    Step 3

    Mix the wet ingredients together and add all at once to the dry.

    Step 4

    For the crumb topping: melt the butter.

    Step 5

    Mix together sugar and flour and add the melted butter to make a rough crumb.

    Step 6

    spread batter evenly onto the bottom of the pan prepared either with a no stick sheet or lightly greased and floured. layer fruit of your choice: plums, rhubarb, apple, blueberries etc. Then sprinkle the crumbs evenly over the cake.
