Grace’s Flax and Oat-bran buns
Simple, health buns. mix in the bread machine and bake in the oven.

1 1/2 hours in bread machine, 20 min to shape, rise 1/2 hour, bake 15 minutes

About this Recipe
These buns come from my sister’s kitchen. I have no idea where she got the recipe, but it’s a staple. The buns always turn out. I’ve only made small adjustments to the amount of oil and yeast. They are full of fibre but light and fluffy at the same time. This recipe divides in half nicely if you have a smaller bread machine or just want fewer buns. (8 bun version here >)

Ingredients
- 1 2/3 cups warm water
- 2 tablespoons olive oil (or substitute your favourite cooking oil or melted butter or margarine)
- 5 Tablespoons of oat bran (rounded)
- 3 Tablespoons of ground flax (rounded)
- 2 Tablespoons milk powder
- 1 Tablespoons sugar
- 1 Teaspoon salt

3 cups all-purpose flour
- 1 1/2 Teaspoons yeast

Step by Step Instructions
Step 1
In a small bowl, mix together: oat bran, powdered milk, ground flax, salt, and sugar. HINT : you can grind flax seed in your coffee grinder, if you’re using pre-ground flax be sure it hasn’t gone rancid. you can usually tell by the smell.
Step 2
Pour water and then oil into bread machine pan and then add the bran mix. Add flour. Place a small dent on the top of the flour to hold the yeast and pour in the yeast.
Step 3
Set the dough machine “Dough”
Step 4
When the Dough comes out, pour onto a greased surface. Oil your hands as well. The dough is soft is sticky! Don’t punch down or flatten. Split it in half and then again and so on until you have 16 more or less equal portions and shape into balls.

Step 5
Cover the buns with a clean cloth and let them rise for about a half hour until double.
OVEN PROOFING METHOD : if your air is particularly dry or you want to speed things up, you can proof them in your oven. Heat oven to 200°F and turn off. pour boiling water into an oven safe dish and place at the bottom of your oven. place the pans of buns in the oven with the door propped open. be sure to check every 10 minutes to see if the buns are double already.
Step 6
Once the buns are risen place them in the preheated oven at 375°F and bake for 15 minutes. that’s it.
