About this Recipe

This is go to recipe if you don’t have much time and want something nutritious and warming. ingredients are almost always available, no need to make a special trip to the store.

Ingredients

  • 1 1/2 cups red lentils (red because the cook much more quickly than most other types, if you use brown or green lentils you’ll need to extend your cooking times)
  • 1 Litre Water

  • 1 Litre Chicken, Beef, or Vegetable Broth (1 litre water plus 8 teaspoons liquid bouillon concentrate eg. Bovril)

  • 2 Large potatoes, Diced

  • 2 medium carrots diced (optional)

  • 2 garlic clove, crushed

  • 1 tablespoon minced or grated ginger (optional)

  • 1 large onion, diced

  • 1/2 teaspoon salt

  • 1 teaspoon cumin powder

  • 1 1/2 teaspoon curry powder

  • 1/2 teaspoon garam massala (if you have it)

  • Pepper to taste

  • 2 carrots, diced

  • 1 Tablespoon Lemon (after the soup is cooked)

Step by Step Instructions

Instant Pot : Step 1

Add everything to the instant pot except lemon. remember to rinse you lentils well. stone soup is good in stories but not in reality. cook for 10 to 15 minutes on high pressure. you can use quick release for pressure. add lemon juice before serving.

Instant Pot : Tip

you can start by just adding the liquid to the pot, put it on Sauté mode and while it’s heating chop and add everything else. This will shorten the time it takes for the pot to reach pressure.

Tip

remember to rinse you lentils well. stone soup is good in stories but not in reality. put them in a regular flour sieve and run cold water over while rubbing through your fingers until the water coming out the bottom runs clear.

Stove Top : Step 1

Bring water and broth to a boil. Add washed lentils and rest of ingredients except carrots and lemon juice.

Bring to a boil. Reduce heat and simmer 30 minutes. Add carrots and simmer another 15-20 minutes. Stir in lemon juice. Serve.
