Chocolate Banana Bread
Not really a bread at all but possibly the best chocolate cake ever. Slightly adapted from Once Upon a Chef (web link >)

About this Recipe
Chocolate Banana Bread, made with bananas, sour cream, butter and chocolate chips is amazingly moist cake with bits of chocolate chips melted in pockets. Serve on its own or douse with whipping cream or a scoop of vanilla ice cream.
Ingredients
- 1¼ cups all-purpose flour
- ¼ cup natural unsweetened cocoa powder, (not Dutch Processed eg. Fry’s)
- 1 teaspoon baking soda
- 1 teaspoon salt
- ½ cup butter, at room temperature
- 1 cup sugar
- 2 large eggs
- 1 cup mashed very ripe bananas, from 2-3 brown bananas
- ½ cup sour cream
- 1 teaspoon vanilla
- ½ cup semi-sweet chocolate chips
Step by Step Instructions
Step 1
Preheat the oven to 350° F. Grease a 9 x 5 x 3-inch loaf pan with oil (eg. olive or vegetable oil) or use a non-stick liner.
Step 2
Sift together flour, cocoa powder, baking soda and salt.
Step 3
Beat the butter and sugar until light and fluffy, 2 to 3 minutes.

Step 4
Add the bananas, sour cream and vanilla and mix on low speed until the batter looks uniform.
Step 5
Add the eggs one at a time. Add the dry ingredients and beat gently until just combined.
Step 6
Fold in the chocolate chips.
Step 7
Pour batter into prepared loaf pan and even out a bit. Place in preheated oven.
Step 7
Bake for 1 1/4 hours. test the highest part of the loaf to the full depth of a toothpick. The cake is done when the toothpick comes out clean or with just a few moist crumbs attached. Remove from oven an rest for at least 10 minutes before removing from cake pan.

- 1 stick (½ cup) unsalted butter, at room temperature
- 1 cup sugar
- 2 large eggs

- ½ cup semi-sweet chocolate chips
