Hot Cross Buns

Introduction
About this Recipe
When my son was small the children’s programming often included the song “Hot Cross Buns.” I’ve combined a couple of different recipes over the years to get to this current version that works nicely for Bread Machines.
Ingredients
Dough
- 1 eggs, plus
- 1 egg yolk
- 3/4 cup water
- 3 Tablespoons milk powder
- 1/3 cup cold butter (grated)
- 6 tablespoons sugar
- 1 1/2 teaspoons lemon zest
- 3/4 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 3/4 teaspoon salt
- 3 cups flour
- 1 tablespoon yeast
- 1/2 cup raisins
Glaze
- 1/2 cup icing sugar
- 1 tablespoon milk
- 1/2 teaspoon lemon juice
Mixture for piping on a cross (optional)
- ¼ C Flour
- 2 ½ tsp Oil
- 2 TBSP Water
- Pinch of Salt
Step by Step Instructions
Step 1
DOUGH: Put all ingredients except fruit into bread machine. Set for dough. Add fruit at signal. (about 10 minutes in OR wait until the dough cycle is done, place the dough on a lightly oiled surface. flatten out to about an inch thick, sprinkle raisins over top, press a little into dough and roll together and pinch the dangling sides – I actually find that this method results in the best distribution of raisins)
Step 2
Prepare 2 large baking sheets with parchment paper or a non-stick spray or re-usable sheeting.
Step 3
When dough is ready, remove and separate into 16 pieces. Shape into balls.
Place balls 1/2″ apart on pans.
Step 4
CROSS PIPING: In a small bowl mix the piping ingredients together and load into a piping bag or the corner of a clean small plastic bag. If using a plastic bag clip a very small hole at the tip of the bag. Pipe a cross over the top of each bun.
Step 5
Cover and rise in warm place until doubled (about 1 hour). If you have a proofing setting on your oven it will be about 1/2 hour.
Bake 12-15 minutes at 375 F. Every oven is different so keep an eye on them the first time and make a note of the time that suits your oven when they are a golden brown on top.
Step 6
GLAZE: In a small bowl add sugar, lemon and then milk. don’t make ahead of time, it thickens quickly. Glaze the buns while they’re still hot.

Yield: 12 – 18 buns (depends on your size preference)
