About this Recipe

This recipe was adapted from my friend Susan’s kitchen. It’s both the healthiest and for me, the tastiest of many banana bread recipes I use.

Ingredients

  • 1 1/2 cups whole wheat flour or 3/4  cup White and 3/4 cup whole wheat (my preference)
  • 1/4 cup wheat germ or 2 rounded tablespoons of oat bran
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup mashed banana (about 2 bananas)
  • 1/2 cup honey
  • 1/4 cup oil (olive, canola or corn)
  • 3/4 tsp vanilla
  • 1 egg
  • 1/2 cup chopped nuts (pecans or walnuts) optional

Step by Step Instructions

Step 1

Sift together dry ingredients.

Step 2

Stir together wet ingredients.

Step 3

Fold dry into wet, gently until thouroughly blended. DON’T BEAT.

Step 4

Prepare loaf pan with a light coating of oil. Pour in batter.

Step 5

Place in preheated oven. Test with a toothpick to check if it’s done.
